Veggie egg white scramble

2 large egg whites: 50 cals

1/2 cup baby spinach: 3 cals

1 small zucchini: 60 cals

1 large field mushroom: 7 cals

1/2 medium brown onion: 23 cals

All sautéed then scrambled in olive oil and seasoned with thyme. 

Total calories: 143 :D

I’ve been experimenting with treats I can have with a tea to replace my maple syrup nut butter combination. These low sugar Orange and almond thumbprint cookies fit the bill.

Ingredients

  • 1/2 cup almond butter
  • 1 egg
  • 1/4 green apple
  • 2tbs desicated coconut
  • 1/4 cup currants
  • Rind of 1 orange
  • 1 tsp sea salt
  • 1/4 tsp vanilla essence

Preheat the oven to 190 degrees celcius.

Peel the skin off the quarter of apple (and ideally eat it rather than bin-ing it). Finely chop and place in the microwave for approximately 60 seconds to soften it. This should provide you with around 2 tbs.

Place the apple along with the other ingredients into a mixing bowl and stir until combined. 

Place small lumps of the batter on a lined baking tray and press down with your thumb. You’ll notice a lot of almond oil coming out of the mixture, but that’s okay.

Bake for 12 minutes and allow to cool for 5-10 minutes prior to eating.
